Bank Atcharawan, the sommelier, chef, and restaurateur who brought Las Vegas restaurants like Chada Thai & Wine and Lamaii, is now at work on a brand new restaurant that will bring together flavors from across the globe (especially East Asia) with Atcharawan’s beloved Thai cuisine.

“I’m going to be trying to incorporate a lot of different influences into the menu,” Atcharawan told What Now in a conversation on Friday. “So there will be some Japanese and Korean ingredients and techniques—hence the name Jipata. But all with that Thai flavor, that Thai base.”
The menu will feature dishes like Jungle Curry (Pan-seared branzino, bamboo shoot, Thai eggplant, mushrooms), Roasted Mushroom (Shimeji, kimchi, sesame oil, gochujang), Goong Char Nam Pla (Fish sauce marinated shrimp, lime, pickle, mint), Uni Toast (Shokupan, egg, kewpie mayo, prik pao), and Pattani Steak (Strip Loin, Tamarind Curry, Almond, Shishito).
The culinary force behind five previous restaurants, Atcharawan first made a name for himself as a sommelier at Lotus of Siam, where he created “what Food & Wine deemed ‘one of the best Riesling-based wine programs in the country.’” He was named the Wine & Spirits Magazine Sommelier of the Year in 2013, and his restaurants have garnered recognition from organs like Bon Appetit (“50 Best New Restaurants” in 2012 for Chada Thai and Wine) and Wine Enthusiast (“Top 100 Wine Restaurants in America” in 2019 for Lamaii).
Jipata will open in an intimate space reminiscent of New York City, with seating for about 25 guests. There will also be an 8-seat bar, serving beer and wine to start, with plans to move to full alcohol in the future.
Jipata will open at 3460 Arville Street this fall.
