Blue Octopus to Open with Premium Sushi in Chinatown

5 Star Executive Chef Goro Kato will serve up premium sushi and other Japanese cuisine

A new premium sushi restaurant and grill, the Blue Octopus, will open soon on Spring Mountain Rd. The restaurant recently filed paperwork with Clark County to open in the building at 5740 Spring Mountain Rd.

What Now Las Vegas reached out on Monday morning to Marc Borlongan, Chief Financial Officer of Spectra Group Holdings, who confirmed the news regarding Blue Octopus, which will offer sushi and other Japanese dishes from 5-Star Executive Chef Goro Kato.

“It takes months to learn the knife skills required to slice sushi with precision,” reads promotional material for the upcoming restaurant. “At least a year to learn how to break down and butcher a fish. And a lifetime to master the art of selecting the perfect fish for sushi. At the Blue Octopus, we will deliver the highest quality and premium sushi, including other Japanese cuisine.”

The location previously housed Kitchen of Asia, a Korean hot pot restaurant serving Korean hot pot dishes like Troop Stew and Kimchi & Pork Belly Hot Pot, along with barbecue dishes like Kalbi and Bulgogi, stir fry dishes, and several varieties of the ever-popular Bibimbap.

The Spring Mountain Rd location, just west of the intersection with Westwind Rd, is near a small retail center that is home to Sunfood Market and several other local businesses and restaurants, including Dakao Sandwiches. Other eateries located nearby include BBQ King and Pho Saigon.

No opening date has been announced for the Blue Octopus.
