Growing up in Hawaii, Trevis Nishioka has always been surrounded by great chefs; his family owns Honolulu’s Side Street Inn, a restaurant that once drew in the likes of Anthony Bourdain.
So when Nishioka moved to Las Vegas with his wife and kids ten years ago, he began cooking Hawaiian food out of necessity.
“We started getting homesick, so I started cooking,” Nishioka told What Now Las Vegas. “The one thing that can really comfort you is the food from Hawaii. I was on a mission looking for places to eat, trying to get the best of the best, and it was super hard to find.”
When Nishioka began sharing his homemade dishes with friends, their response made it clear: he had to open a restaurant. Bowlz LV will soon be moving into the space left by Grinds 2 Da Max, another Hawaiian food vendor that has decided to upsize in South Vegas.
“A lot of us Hawaiian locals live in South Las Vegas, so that’s why they decided to move,” Nishioka explained. “It’s really cool that they gave me the opportunity to take over that spot and get my business going. We’re hoping to expand to different spots and provide the same Hawaiian food that you would get on the island.”
The menu will be partially inspired by that of his family’s restaurant, featuring Side Street Inn fried rice and pork chops. Other items, however, will be of Nishioka’s own creation: Hawaiian Frost guri guri and never-frozen, fresh poke.
“I’m inspired by my family’s restaurant in Hawaii, and I’m trying to bring that local style of food out here in Vegas,” Nishioka said.
Locals will soon be able to find Bowlz LV at 6475 W Charleston Blvd. #130, though an opening date has not yet been finalized.
