Cafe Rio Looks to Be Opening Another Las Vegas Location

With locations all over Sin City, Cafe Rio Mexican Grill has made its mark in the Las Vegas Valley. The chain, which has locations in the southwestern states, along with East Coast states like Maryland and Virginia, announced earlier this year that it would open 15 new locations in 2022, including at least one in Nevada.

Permit paperwork filed recently with Clark County indicates that one of these may be planned for Spring Valley. A Cafe Rio project with a contract valuation of $400,000 was described in a permit application for work at 5235 S Fort Apache Rd. (Alternatively, an opening may still be far enough out that this location will not number among the announced fifteen opening in 2022.)

Headquartered in Salt Lake City, the fast casual restaurant chain serves an array of familiar Mexican classics like tacos, burritos, nachos, and tostadas with an arrangement of signature sauces and protein choices including sweet pork barbacoa, carne asada, and fire grilled steak, along with vegetarian options.

What Now was unable to reach a representative of Cafe Rio for comment on Monday. No opening date has been announced for a Fort Apache location.
