Cafe Zupas Adding Seventh Vegas Location

Cafe Zupas is planning a seventh Las Vegas-area location. The “globally inspired” fast-casual chain has secured a lease to open a 3,600 square-foot restaurant in Blue Diamond Crossing shopping center, at 4112 Blue Diamond Rd, in Southwest Las Vegas.

Since starting in Utah in 2004, Cafe Zupas has opened over 50 locations in eight states, including Arizona, Idaho, Illinois, Ohio, Minnesota and Wisconsin.

It serves soups, salads and sandwiches and prides itself on using clean, in-house ingredients with its culturally diverse food. Zupas also offers catering and delivery services with online orders.

The timeline for the Blue Diamond Rd. location is unknown. Reps for the growing chain, including Co-Founder Dustin Schulthies, did not respond to a request for comment.

Blue Diamond Crossing is anchored by Target and offers over 500,000 square feet of commercial space.
