Throughout the pandemic, co-owners Lyndsi Lillis and Mandie Gilbert have been popping up across Las Vegas, serving great-tasting, healthier, organic coffees from a charming, little coffee trailer. Despite the pandemic’s yearlong closings and restrictions imposed on the service industry, the Aspire Coffee House trailer has allowed Lillis and Gilbert to connect with locals and get their name out there. Lillis told What Now Las Vegas that with everything opening back up, it seemed like the ideal time to set down some roots.

Aspire Coffee House will settle into its first brick-and-mortar location at the bistro in the community center at 10111 W Skye Canyon Park Drive. The 1,283-square-foot space will provide 16 seats inside and 40 seats outside, unless there is an event booked on the patio. Because the bistro is already built-out, the space will only require minor cosmetic changes to fit Aspire’s style. Aspire Coffee House will be among the few specialty coffee shops in Skye Canyon, an area based on health and fitness.

Aspire Coffee House strives to help people aspire to live happy, healthy lives by providing organically sourced coffee and espresso beans served in eco-friendly cups and packages. The coffee shop provides delectable espresso-based drinks and pastries made from organic ingredients and no refined sugar.

Aspire Coffee House has partnered with Dark Moon Roasters to add a few new cold brew options to its menu. The coffee shop will also offer its regular latte flavors and new summer flavors coconut and orange dream; smoothies; smoothies bowls; four different toasts made with local artisan bread, including a vegan gluten-free option; overnight oats; gluten-free pastries; and Joy Pop popsicles, including a tantalizing vanilla bean popsicle affogato. If you’re stumped by all of the delicious options, we recommend going with Lillis’ go-to honey lavender latte paired with the almond butter banana toast.

Although the Aspire Coffee House trailer will be taking the summer off, it will start taking events again in the fall. Until then, be sure to swing by Aspire Cofee house’s grand opening at Skye Canyon on July 10th.
