Cupbop Plans Sixth Las Vegas Location, More to Come

The Korean-BBQ-in-a-cup brand is growing its menu too

Burgeoning Korean-barbecue-in-a-cup brand Cupbop is continuing to expand in Las Vegas. The city’s sixth Cupbop location will open at 4380 Cactus Ave.

More growth is to come, too. Cupbop is working toward an ultimate goal of fifteen to eighteen stores, Kevin Santiago, owner of Greenlight Hospitality, the group behind brands like Five Star BBQ, Sodalicious, Station 22, and others, told What Now on Monday.

“We think Las Vegas is a great place,” Santiago said. “People really love Korean barbecue.”

Cupbop’s menu of bowls—each served with rice, cabbage mix, and noodles—includes the Rock Bop, which features Korean style tangy fried chicken; the Doochi Bop, with fried tofu; the Mandoo Bop, with deep fried potstickers; and the Combo Bop, which comes with a choice of two menu items. Sides include mandoo, kimchi, and fried chicken skewers called Kko Kko Sticks. Vegetarian and gluten free options, including gluten free noodles, are also available.

Santiago says the brand is growing its menu, too.

“We have some really exciting new menu items,” said Santiago. “We have Korean corn dogs, which are just awesome. We test-piloted them in Utah, and we’ll roll them out.”

Expect to see a chicken katsu dish and more as this concept continues to develop.

“We feel like our offering is growing, and our popularity is growing,” said Santiago.
