Edo Tapas Team Bringing New Takes on Spanish and Italian Cuisine to the Gramercy

Anima will serve a menu of progressive Spanish and Italian cuisine with Asian influences

The Gramercy Residences will soon be home to Anima, a new restaurant from team behind Edo Tapas, according to recent coverage in Eater Las Vegas.

The restaurant will feature a mix of Spanish and Italian dishes with some Asian influences as well, in an approach that sommelier and partner Joseph Mikulich described to Eater as a “frontierless, progressive-style restaurant, with no classical dishes.” The menu will feature the expertise of Edo executive chef Oscar Amador and former Ferraro’s Italian Restaurant & Wine Bar executive chef Francesco di Caudo.

Some dishes will be transferred from the Edo menu, including pressed ham and cheese Bikini Sandwiches, reimagined with brioche, sopressata, and Mahón cheese, along with some pasta dishes and tapas writ large, but the restaurant will not be a tapas restaurant.

Libations will include a wide range wines—150 in total—with a focus on Italy and Spain but with inclusions from the rest of the world as well. Emphasis will also be placed on gin and tonics, sherries, and Negronis.

Anima will open in the space formerly occupied by The Kitchen Table Squared, in Suite #85 of the Gramercy’s 9265 W Russell Rd address. Renovations to the space include a more open kitchen, allowing the space’s total of 90 seated guests to watch the chefs work, and seafood and charcuterie stations that will occupy the front of the space, allowing for interactive experiences. A 10-seat private dining room will also be available.

What Now Las Vegas reached out to manager Roberto Liendo on Monday morning. Liendo was not available for comment.
