Fiesta Mexicana Will Open Flagship Location on the Strip Next Year

The chain’s flagship location will feature a new modern ambiance

With locations in Arizona, Colorado, New Mexico, and Utah, and one already open on Rainbow Blvd, Fiesta Mexicana has been serving authentic Mexican food since it opened July 4, 2000. The chain is now planning to break into the Las Vegas Strip with a new, updated location near the STRAT, working to open in Q1 of 2023.

“The core concept will be the same—the old style family recipes, the authenticity,” COO Damien Rangel told What Now Las Vegas in a Thursday afternoon phone call. “We want to bring a new, more contemporary look and feel to our menu. Modernize it a bit. Bring in some new flavors, new spices, new presentation.”

The Rainbow Blvd location’s menu kicks off with starters like Queso Fundido, Nachos and Baby Shrimp, and Chicken Taquitos, before launching into considerable selections of tacos, tostadas, enchiladas, and burritos, plus beef dishes like Tampiqueña (Steak topped with fresh shrimps, onions, bell peppers and garnished with melted cheese) and chicken dishes like Pollo a la Crema with mushroom in a creamy sauce. Seafood lovers will also find Campechana (Shrimps, octopus, scallops, tomato, cilantro, avocado and onions served in a schooner with crackers) and Camarones a la Fiesta (Bacon wrapped prawns, served with guacamole and mixed vegetables). Plus, so much more.

Specific details on how the flagship’s menu may differ are unavailable, but Rangel described the changes as being a move in a contemporary direction.

“Traditionally, when people think of Mexican food, they think of mariachi or banda. This will be more an urban Latino vibe,” Rangel said. “The whole culture, not just that specific niche.”

Rangel added to this the goal of serving “younger generations that want to experiment with other culture’s foods and environments.”

“We want to bring in new customers, new trends, while maintaining our core customers,” he said.

In addition to the flagship location opening on the Strip, the chain plans to open two more locations next year, both in Phoenix, AZ.

Barring setbacks, Rangel said, the 2210 S Las Vegas Blvd location will open between New Year’s and Valentine’s Day in 2023.
