Rakkan Ramen’s broth is plant-based with umami flavor as its “crucial essence.”

“Amp up the flavor with a dashi bomb,” reads the first page of the menu at the chain’s Downtown Los Angeles location. “We slowly simmer the carefully chosen vegetables such as kombu to extract [their] rich flavor and lock in Umami.”

The DTLA menu’s ramen varieties include Amber, the most popular, with vegetable broth, grilled pork, onion, parsley, bamboo shoots and seasoned egg, and Garnet, with vegetable broth, sesame paste, grilled pork, green onion, bamboo shoots and seasoned egg.

Appetizers include greens like salads and edamame; crispy gyoza (Japanese fried dumplings) in beef, pork, and vegetarian varieties; and pork and chicken buns. The menu also offers a few sushi varieties, along with plates like Shrimp Shumai, Takoyaki, and Crispy Chicken.

Rice Bowls like the Spicy Tuna Bowl and the Crispy Chicken Bowl are also available, as well as Kids’ Meals for children ten and under.

What Now Las Vegas was unable to reach a representative of Rakkan Ramen for comment on the new location and its opening date.
