Jay Bird’s Chicken May Be Opening Grand Canal Shoppes Location

Born in Long Beach, California, Jay Bird’s Chicken is “a renowned concept that celebrates the flavors of Nashville hot chicken.” Founded in 2019 by Wild Thyme Restaurant Group and executive chef Jay Bogsinske, the brand has several locations in California, plus one apiece in Sedona, Arizona, and St. George, Utah.

Business licensing paperwork now indicates Jay Bird’s Chicken may be preparing to launch its first location in Las Vegas, in the Grand Canal Shoppes at the Venetian Resort. The paperwork shows “Jaybird’s Chicken” opening at 3377 Las Vegas Blvd S, Suite 2610.

This would be Las Vegas’s first time trying Jay Bird’s popular offerings, like its Mac Daddy & Fries (Chicken breast, spiced with your choice of heat, topped with mac & cheese and comeback sauce on a brioche bun; served with spicy fries and one sauce), Chicken & Waffles, Blazin’ Fries (Spicy crinkle-cut fries topped with mac n’ cheese, one chopped tender spiced with your choice of heat, comeback sauce, and Big Sexy sauce), and more.

Jay Bird’s sauces come with your choice from six levels of heat. There are sauces like Comeback Sauce (Tangy Nashville house sauce), Buttermilk Ranch, and Big Sexy Sauce (Cayenne pepper hot sauce).

The paperwork was submitted to Clark County by Halo Halo Filipino Kitchen LLC. Halo Halo is the Filipino concept located in Suite 2258 at the Grand Canal Shoppes.

What Now reached out to co-owner Geraldine Luzuriaga this week to inquire about plans to launch a Jay Bird’s Chicken at the Grand Canal Shoppes. Luzuriaga was not available for comment by deadline. It is not yet confirmed whether the “Jaybird’s Chicken” project at the Grand Canal Shoppes is a new Jay Bird’s Chicken location or a brand-new concept by the same name.
