Powered by local culinary school graduates Chef Kayla and Chef Elijahwan, Kraken Cafe has offered a streamlined menu of gourmet burgers, sandwiches, and breakfast from a food truck in spots like the Downtown Las Vegas Events Center and the Desert Breeze Community Center in Spring Valley. The brand is now preparing to launch its first brick-and-mortar.

The existence of such a plan was first announced on the brand’s Facebook page at the end of February, although no further details were then given. Licensing paperwork submitted recently to Clark County appears to place the brick-and-mortar at 855 E Twain Ave in suite 107. Suite 107 has, at least until recently, been occupied by Fry Dayz Fish & Wings.

In food truck form, Kraken Cafe has offered breakfast choices including Chicken and Waffle (or Chicken and French Toast!) and breakfast sandwiches with egg and cheese, plus bacon or sausage. The menu’s selection of burgers includes the Umami Burger (lettuce, tomato, cheese, dijonaise, fried egg, pork sauce, skirt steak, short ribs, and a burger patty) and the Bison Burger (lettuce, tomato, cheese, fried egg, Port sauce, bacon, dijonaise, fried calamari rings and a bison patty).

The menu also features other sandwich choices, including the Kraken Express, a spicy pulled pork sandwich with coleslaw and pineapple marmalade, and the Crispy Chicken Sandwich with sriracha honey mustard.

What Now Las Vegas was unable to reach Chef Kayla for comment on the first Kraken Cafe brick-and-mortar on Wednesday. Details on the restaurant’s timeline for opening are unavailable.
