Las Vegas is Getting a New Restaurant from Chef Evan Funke

Details are scarce on the new project from LA-based chef known for Felix Trattoria and Mother Wolf

Chef Evan Funke, the culinary force behind restaurants like Felix Trattoria and Mother Wolf, has a new restaurant in the works here in Las Vegas. A recent posting on Craigslist shows the project is in search of an executive chef for a “Restaurant by Evan Funke” and Ten Five Hospitality.

The Craigslist posting meticulously avoids revealing any details about the upcoming restaurant, however, providing not even a name or an address. After finding the posting, What Now reached out to the chef to inquire about the project. Funke said no details on the project can be revealed yet, leaving us all on the edge of our seats for the moment.

“Evan Funke is a culinary storyteller, a custodian of Italian tradition and a master of the old world techniques of handmade pasta,” reads a bio on the Felix Trattoria website. “Funke’s singular passion as a pasta maker and chef was solidified in Bologna, under the mentorship of Alessandra Spisni at La Vecchia Scuola Bolognese.”

Funke recently opened another restaurant, called Funke, in Beverly Hills, a project the chef referred to in Eater Los Angeles coverage late last year as, “a culmination of my time spent in Italy over the last 15 years.”
