With locations in 11 U.S. states and Asia, the brand already has one location on the Strip, at Fashion Show Las Vegas. The shack-style location at the Park will feature seating and views of the Strip.

“For a city in the desert, Las Vegas sure loves good seafood,” founder Luke Holden told the Review-Journal. “We’re a Maine company that opened its first shack in New York, so it feels just right to be bringing a taste of Maine to New York-New York.”

The brand’s Lobster Roll features a quarter pound of chilled lobster knuckle and claw meat served in a buttered and toasted New England split-top bun, topped with mayo, a drizzle of lemon butter, and the brand’s secret seasoning. Menus have also featured platters like the Whole Steam 1.5 lb Lobster (with two sides, lemon and butter, and grilled sourdough) and the Fried Scallop Platter, plus plenty of beer.

What Now was unable to reach a representative of Luke’s Lobster on Friday.
