Nick the Greek Plans to Open Five Las Vegas Locations

The first location is gearing up for a grand opening in Silverado Ranch

Nick the Greek, a souvlaki and gyro chain born in San Jose, could just as easily be called Nicks the Greeks. It was founded by three cousins—Nick, Nick, and Nick—whose fathers came to the United States from Greece in the 1960’s and 1970’s. One of those three fathers started a restaurant in San Jose at the time that still operates to this day. It’s a family with serious restaurant know-how.

Baby Nick, the youngest of the three, dreamed up Nick the Greek in college, when he wrote a paper laying out his plan for the concept. When a professor gave Nick a bad grade, saying the concept would never work, Nick quit school and set about trying to prove them wrong.

And so Nick the Greek was born. It offers a streamlined menu that opens with a selection of pita sandwiches, including Beef/Lamb, Pork Souvlaki, Falafel, Veggie, and Grecian Beefteki Burger. Then follows a selection of plate dinners like the Gyro Plate, Souvlaki, and the Falafel plate. Salads, Fries, and Sides complete the picture.

“After the first year, they started to say, ‘Wow, this is working well, people are really enjoying it,’” Director of Franchising Rob Crider told What Now on Tuesday. “By the time they had five locations, they started to say, ‘Wow, this is scalable. This seems like a franchise.’”

And this is how, in the course of less than 10 years, Nick the Greek has moved toward explosive growth. Last week saw the opening of the chain’s 33rd franchise location, which is added to nine corporate-owned stores for a total of 42. Sixty more are currently in process.

That includes five locations right here in Las Vegas, the first of which will have a Grand Opening, complete with a few hours of free food, before the end of the year. It is planned for 9255 S Eastern Ave. Another undisclosed location is currently under negotiations for a lease, with three more to follow in the not-so-distant future.
