The food hall trend in Las Vegas shows no sign of fading away! The Venetian Resort has announced that it will be adding another food hall to the Las Vegas Strip’s growing collection: Via Via, scheduled to launch in mid-2025, according to coverage by the Las Vegas Review-Journal.

Eight tenants have been announced so far for the food hall, including Ivan Ramen, All’Antico Vinaio, B.S. Taqueria, Close Company, and more. In the coming weeks, What Now will take a closer look at some of the concepts coming to Via Via.
New York City-based ramen concept Ivan Ramen is one of the exciting concepts opening next year at the Venetian’s upcoming Via Via Food Hall. The brand was created by ramen chef Ivan Orkin. “Orkin opened two successful ramen shops in Tokyo, a notable accomplishment for a foreigner (he was born on Long Island),” says coverage by the Las Vegas Review-Journal.
“I’ve always wanted to be in Vegas,” Orkin told What Now on Wednesday. “It’s a wonderful place, with so many people from all over the world.”
Ivan Ramen’s New York location has a menu featuring dishes like Tonkotsu Tsukemen (cold, thick noodles served with rich pork broth on the side for dipping, pickled mustard greens, binchotan grilled oyster mushrooms, pork katsu cutlet, served with niboshi powder, niboshi infused vinegar), Cold Sesame Noodles, and Spicy Miso Ramen (A blend of 12 chilis, blended miso, dashi + chicken broth, niku miso pork, cilantro, bean sprouts, raw garlic, a soft egg, togarashi, Szechuan pepper, and our thin rye noodles).
Details are not yet available about which dishes will be found on the menu at Via Via, but Orkin says you can expect to see the greatest hits.
Ivan Ramen is also at work on an opening in London, Orkin says. It’s a path toward becoming a prestige ramen brand—and the Venetian is a great stop on that road.
“They’ve chosen some fantastic, concepts,” Orkin said. “The Venetian is such a beautiful place, with so many people. I’m humbled to be a part of it.”
