The food hall trend in Las Vegas shows no sign of fading away! The Venetian Resort has announced that it will be adding another food hall to the Las Vegas Strip’s growing collection: Via Via, scheduled to launch in mid-2025, according to coverage by the Las Vegas Review-Journal.

Eight tenants have been announced so far for the food hall, including Ivan RamenAll’Antico VinaioB.S. TaqueriaClose Company, and more. In the coming weeks, What Now will take a closer look at some of the concepts coming to Via Via.

Created by James Beard Award Nominee and bestselling author Chef Mason Hereford, New Orleans‘s Turkey and the Wolf is making its West Coast debut in the Venetian’s upcoming Via Via food hall.

The counter-service sandwich shop has made its mark, being “named by Bon Appétit as the best new U.S. restaurant of 2017 and by Food & Wine and Esquire as one of the most important restaurants of the decade” (says coverage by the Las Vegas Review-Journal).

The menu has featured sandwiches like the Collard Green Melt (slow cooked collards, Swiss cheese, pickled cherry pepper dressing, and cole slaw on toasted rye) and the Mama Tried Burger (two all-beef patties, “special sauce,” lettuce, cheese, pickles onions, and tomatoes, all on a not sesame-seed bun).
