“We’re excited to be able to open in a brand-new facility,” owner Marvin Wallace told What Now Las Vegas in a phone call on Tuesday. “Our current building is from 1955, and there have been a few challenges. We’re going to get to do some of the things we’ve wanted to do all along.”

The menu at the current location on Pacific Ave, not far from The Watermark, features diner breakfast classics like Steak & Eggs and Biscuits & Gravy, plus a variety of omelets. Lunch includes burgers, salads and sandwiches. Completing the picture is a build-your-own burrito or scramble, with guests choosing from ingredients like chorizo and a variety of veggies.

Much of the current menu will carry over to the new location, Wallace said, but there will be new choices as well. One recent invention is the Water Street Burrito, with pulled pork, eggs, seasoned potatoes, avocado, mozzarella cheese, sour cream, and homemade green salsa.

The new Pacific Diner location is expecting to open late this year or early next year, Wallace said.

Located across from Henderson City Hall, The Watermark will feature about 40,000 square feet combined of retail and office space, plus 151 residential units.
