What Now Las Vegas confirmed the news in a phone call with owner Sergio Higareda on Friday morning. Higareda said the Hughes Center Drive Restaurante Mi Ranchito’s opening date was not set yet (an ever more familiar situation for the post-2020 restaurateur), but that the location should be expected to start serving the Sahara Ave restaurant’s proven menu soon.

That menu opens with breakfast. Huevos: Ranchero, a la Mexicana, Con Chorizo, and more. Appetizers include Nachos con Carne, Empanadas with shrimp and cheese, and oysters.

What follows are number of appetizing ceviche varieties like Piña Cevichera, with shrimp, fish, octopus, and scallops in red sauce with avocado. Botanas de Mariscos include Camarones en Aguachile and Callo de Hacha (fish in habanero sauce and red onion). This only scratches the surface of the menu, which also includes a wide variety of shrimp dishes, combination plates, and fajitas.

The location on Hughes Center Dr is situated near Residence Inn by Mariott, along with a number of other dining locations, including Fogo de Chão Brazilian Steakhouse and Bahama Breeze.
