Since launching Vitos Tacos in 2020, Victor Gonzalez and his team have been wildly successful, becoming Las Vegas’s “ultimate destination for all things birria,” with food trucks and brick-and-mortar stores all over the city.

Now Gonzalez is at work on a completely different project: Lunakin Cafe, a coffee shop where you can hang out and enjoy an abbreviated yet elevated menu of breakfast and brunch choices.
“We’re still working on the menu,” Gonzalez told What Now on Wednesday. “But it’s going to be really good coffee, heathy food, and a mix of waffles, French toast, avocado toast, stuff like that. It’ll be something different, a nice cafe where you can hang out but at the same time have really good food.”
Plan review paperwork submitted to Clark County shows Lunakin Cafe opening at 4300 W Tropicana Ave.
Gonzalez says Lunakin Cafe is still waiting on those permits to start construction but is expecting to break ground in “a month or so.”
Once finished, the new cafe will feature seating for about 100 guests in a space with an aesthetic Gonzalez says will feature bright greens, lots of plants, and an overall tropical feel that is at once modern and cozy.
