Roast Beef Chain Top Round Breaking Into Nevada with Park MGM Location

The chain is gaining ground with its slow-roasted, thin-sliced roast beef

Park MGM will soon be home to the first Nevada location of fast casual roast beef chain Top Round.

The chain, which has locations in California, Texas, and Florida, got its start on the West Coast in 2013, owner Anthony Carron recalled in a phone call with What Now Las Vegas late Monday morning.

“We were looking at different spaces in the industry,” Carron said. “The better burger thing was going nuts. Everyone was doing it.”

But despite the growth in fast-casual competition to burger-style fast food à la McDonald’s, an analogous move had yet to be made with roast beef. It was a $3 billion market in which Arby’s reigned unchallenged, Carron said, with 3,000 stores around the US and no serious competitor.

And so Top Round was born, moving in to compete by bringing a higher quality roast beef to the table.

“We built a whole menu around slow roasting,” Carron said. “We shave it really thin to order all throughout the day.”

The Top Round menu at the Fort Lauderdale location, which Carron suggested would most closely resemble the menu for the upcoming Park MGM location, features the restaurant’s signature Slow-Roasted Roast Beef Sandwich in varieties like Beef & Cheese, Bar-B-Cue, and Beef on Weck with Atomic Horseradish. The restaurant also serves chicken sandwich and burger varieties like the Chicken Cali (lettuce, tomato, avocado, and ranch on a sesame seed bun) and the Top Round Melt, a burger with two different cheeses, chef sauce and caramelized onions.

The Park MGM Top Round location will also offer chicken tenders and a variety of chicken wings, as well as a craft wine and beer program, featuring twenty different taps.

“It’s going to be a great place to hang out on the Strip and have a great beer, an awesome sandwich, and some fries,” Carron said. “We’re really excited to partner with MGM. It’s going to be awesome.”
