Roll-Em-Up Taquitos Gears Up For Launch in Las Vegas Market with Apache Center Location

California-born taquito chain Roll-Em-Up Taquitos is on its way to Las Vegas. The company first announced a five-location franchising deal at the end of last year. At that time it was expected that the first of the five locations would open sometime this summer.

No update has been forthcoming on when Las Vegas’s first Roll-Em-Up Taquitos is set to open, but paperwork was recently submitted to Clark County for work at 3585 S Fort Apache Rd, suggesting that while the location may be a bit behind schedule, it is on its way. The paperwork gives a contract valuation of $220,000 for work on the Fort Apache location.

“We chose to franchise with Roll-Em-Up Taquitos because we fell in love with the concept and wanted to be a part of launching a new brand from the ground floor,” franchise co-owner Nate Pollock said in a press release. “When we went out to visit the restaurant we really enjoyed the food, the atmosphere and the vibe. The simplicity of the menu and the focus of making a fresh handmade quality product that appeals to a large audience is what also attracted us to the Roll-Em-Up family. We are extremely excited to bring Roll-Em-Up Taquitos to Las Vegas and look forward to the success of the brand.”

Roll-Em-Up serves its taquitos in 3-packs and 5-packs, with a selection of mix-and-matchable ingredients, including beef, chicken, potato, avocado, cheese, and more. Sides include Street Corn, Chips & Guac, rice, and beans. For dessert, finish off with a Churro Donut.

The Fort Apache location is part of a small shopping center called Apache Center. Anchored by a Dollar Tree, Apache Center is home to several other eateries, including New York Chinese and Cafe Breizh.

What Now Las Vegas reached out to Nate Pollock on Tuesday. Pollock was not available for comment.
