“We’ll be opening by the end of the year,” co-owner Tea Guerrero told What Now on Saturday.

Guerrero says the new location will offer the same great menu available at Sayulitas’ other locations, along with drinks. The drink menu will be developed in keeping with the brand’s over all “Go Big or Go Home” approach, Guerrero added.

Promising “Bright Lights, Big Ass Burritos” Sayulitas Las Vegas, located across from Mandalay Bay, offers a menu centering on a selection of indulgent Specialty Burritos. These include the Spamsilog (Egg, Spam, Rice, Cheese & Sour Cream), The Salchichon (Carne Asada, Polish Sausage, Guacamole, Sour Cream, Nacho Cheese & Curly Fries) and the eponymous Sayulitas (Shrimp, bacon, Rice, Lettuce, Mexican Salsa, Guacamole, Grilled Cheese & Chipotle Sauce). There are also various tacos, combination plates, breakfast burritos, tortas, and more.

The Carson Avenue location is also a big upgrade in terms of size, Guerrero says. “It will definitely be bigger than our current location—as in three times the size. People will be able to sit freely.”

We’re excited to see how the place turns out!
