Skye Canyon’s Omelette Cafe to Offer Adult Beverages, Dinner Service

The family-owned business is expanding its service

Opened in January 2021, Omelette Cafe is a local business located in the Skye Canyon community of North Las Vegas, owned and operated by Chef Ignazio Sessa and Annamaria Sessa. The restaurant currently serves breakfast and dinner, opening from 7 a.m. and closing at 2:30 p.m., but a dinner menu and later operating hours are in the works. Documents filed recently with the Las Vegas Planning Commission also show that the restaurant will introduce beer, wine, and liquor to its current menu.

Chef Ignazio confirmed the news in a phone conversation with What Now Las Vegas on Monday, describing the family business’s development. The chef hails from Chicago and has spent the last twenty years in Las Vegas, where he and Annamarie operate both the Skye Canyon Omelette Cafe location and Summerlin’s Omelet House.

Omelette Cafe offers a variety of Chicago-style diner dishes, with a little extra flare.

“We like to take it up a notch,” the chef said.

The menu currently features diner-style breakfast dishes like Homemade Corned Beef Hash & Eggs and several takes on Eggs Benedict (including Eggs Benedict Lobster). Befitting its name, Omelette Cafe offers 38 different omelettes, including the “Ham I Am,” the “Maxwell St. Polish” with Polish sausage and cheddar cheese, “The Rodeo” with homemade chili, cheddar cheese and onions, and the “Sicilian Sessa” with meatballs, Italian sausage, mozzarella cheese, and marinara sausage.

Burgers and sandwiches are also available, including the Caprese Steak Sandwich, the Cajun Chicken Sandwich, and the Chicago Style Italian Beef sandwich.

No set date has been established for the restaurant’s introduction of alcoholic beverages or the expansion of its hours and menu to include dinner. The latter, Chef Ignazio said, is complicated somewhat by the labor shortage currently affecting the restaurant industry, but it is expected to happen in March or April.
