Snooze, an A.M. Eatery Breaking into Las Vegas with Rampart-Charleston Location

With locations in states as far-flung as California and North Carolina (and several in between) brunch chain Snooze, an A.M. Eatery is making its way to Las Vegas. Paperwork filed recently with the Las Vegas Planning Commission shows plans for a restaurant at 1075 S Rampart Blvd, on the northwest corner of the intersection with Charleston Blvd.

The brunch chain offers a packed menu of Eggs, Omeletes & Breakfast Riffs, Plant Power dishes, Benedicts, and other categories like Pancakes & French Toast and Tacos & Burritos.

Breakfast Riffs include Breakfast Pot Pie (Snooze’s homemade rosemary sausage gravy smothers a flaky puff pastry, topped with a cage-free, sunny side up egg, hash browns) and Shrimp & Grits. The plant-based “Plant Power” menu includes choices like Avocado Toast and the Sweet Potato Veggie Smash Up.

Benedicts include the Smashed Avocado Benny, the Bella! Bella! Benny (Thin slices of prosciutto, Italian cheese, and poached cage-free eggs on toasted ciabatta, topped with cream cheese hollandaise, balsamic glaze and Parmesan-dressed arugula), and the Habanero Pork Belly Benny.

In addition to breakfast tacos and a breakfast burrito, the menu also features sandwiches like the Sandwich I Am (soft pretzel roll filled with scrambled cage-free eggs, cheddar cheese and a sausage patty, served with a side of smoked cheddar hollandaise) and the Bacon Sensation (soft brioche bun smeared with green goddess cream cheese, topped with an over medium cage-free egg, Tender Belly bacon and Dijon citronette dressed arugula).

What Now Las Vegas was unable to reach co-owner Jon Schlegel for comment on Thursday. No opening date has been announced for Las Vegas’s first Snooze Eatery.
