Soru Ramen Bringing Ramen, Sushi, and Boba Tea to Third Location

Soru is expanding with a new restaurant in southwest Las Vegas

The northern corner of the intersection between South Cimarron Road and Blue Diamond Road will soon be home to a new outpost of Soru Ramen, a ramen, seafood, and sushi concept with two locations currently operating in Las Vegas.

“The population is expanding,” owner Calvin Yu told What Now on Monday morning, discussing the southwest corner of Las Vegas, where the new Soru is currently awaiting permits for construction. “There’s not too many restaurants on that side of town yet, so we’re thinking it will be a good opportunity.”

Soru offers classic sushi roll choices like the Dragon Roll and the Dynamite Roll, plus other favorites like Curry Chicken Katsu and Tonkatsu Black Garlic Ramen—a savory medley of pork and garlic broth topped with pork chasu, Nitamago (boiled egg), Kikurage (black mushrooms), bamboo shoots, and green onions. Aside from the considerable sushi and ramen selections, Soru Ramen’s menu also features udon noodles, sushi burritos, poke bowls, and a variety of ice slush and boba milk teas with flavors like red bean, matcha, and coconut taro.

The location is part of a small retail center called Blue Diamond Marketplace, which is home to other eateries like BabyStacks, Fuego Mexican Kitchen, and Rounders Grilling & Chilling.

Soru Ramen Blue Diamond is expecting an opening in late 2022 or early 2023.
