The Pink Potato Caribbean Cuisine to Open First Brick-and-Mortar

After two years offering Las Vegas a selection of Haitian, Jamaican, and other Caribbean dishes through its catering services, The Pink Potato Caribbean Cuisine is preparing to open its first brick and mortar at 5006 S Maryland Pkwy, just south of the University District.

Behind the Pink Potato is an entrepreneurial family: Chef (and mother, and former schoolteacher) Kateline, daughter Alexandria, and son Makshud. Hailing from Brooklyn, they’ve built up a following as a catering business with their signature pink potato salad and—to name a few other dishes featured on the brand’s Instagram page—their Creole Stew Chicken, Creole Spaghetti, and Creole Salmon.

The Maryland Pkwy location is part of a small retail center not far south of the intersection with E Tropicana Ave. The plaza also houses Lucky’s Gaming & Spirits and Nigerian Cuisine by MJ.

After two years of preparation, the Pink Potato is finally about to find a brick-and-mortar home. The location is expected to open early this winter.
