Work Permit Issued for Downtown Broken Yolk Café, More Locations Revealed

The chain is preparing new locations for Downtown, Henderson, Enterprise, and on Fremont St.

With locations in six states and counting, the Broken Yolk Café is a burgeoning breakfast, brunch, and lunch chain with a proven menu ranging from country skillets and huevos rancheros to BBQ burgers. It has been offering its inventive and delicious breakfast creations in Las Vegas since 2019, and it is now ready to expand its footprint in the city from one to five locations.

A work permit was issued by Clark County in March for construction work on the chain’s much-anticipated Downtown location at 201 S Las Vegas Blvd, which would seem to indicate that this location, and not the recently reported-upon location on eastern corner of the St. Rose PkwyS Maryland Pkwy intersection, will have the distinction of being the chain’s second in Las Vegas.

Next, it seems, comes that S Maryland Pkwy location, which is expected to open this summer. Two more Broken Yolk Cafés, whose addresses have yet to be revealed, are then expected: one in Enterprise and one on Fremont St.

What Now Las Vegas was unable to reach a representative of Scale x 3 Management, the hospitality and commercial retail real estate group responsible for bringing Broken Yolk to Vegas, for comment this week.
