Xperience Restaurant Group Bringing SOL Mexican Cocina to the Forum Shops

It’s the Baja-inspired restaurant’s sixth location, and its first in Nevada

Xperience Restaurant Group, which operates a roster of casual, polished casual and fine dining Mexican restaurants, announced that it will open the sixth location of its SOL Mexican Cocina brand in the Forum Shops at Caesars this fall.

“Opening SOL in a city like Las Vegas, the entertainment capital of the world, is a milestone for XRG and we could not be more excited about it,” Xperience Restaurant Group CEO Randy Sharpe said in a press release. “By giving SOL a presence in Las Vegas alongside some of the best culinary concepts and chefs in the world, we believe we are in great company and cannot wait to welcome locals and visitors alike with quality, authentic cuisine, an outstanding beverage program, and exceptional service.”

The restaurant will open in the space formerly occupied by Border Grill on the Forum Shops’ first floor. It will seat 305 guests in a space of over 11,000 square feet, serving “an eclectic menu of organic, seasonal dishes,” locally sourced where possible, along with a wide variety of agave-based cocktails.

Dishes teased in the press release include Grilled Sweet Corn with butter, lime, chiles, cotixa cheese, and a chipotle drizzle, and the award-winning Taco Vampiro: double tortillas filled with cheese, serranos, carne asada, guacamole, pico de gallo, chipotle sauce, and cotixa cheese.

Drinks include the Watermelon Margarita (crushed watermelon shaken with blanco tequila, fresh lime, and agave nectar) and the Mezcalero (mezcal shaken with passion fruit, guava, and fresh lime, served in a chili salt rimmed glass).

The SOL Mexican Cocina at the Forum Shops will hold the same special events as the brand’s other locations, like its 3-6 p.m. Happy Hours, 10-a.m.-to-2 p.m. Weekend Brunch, and 3-p.m.-to-close Tacos + Tequila Tuesday. Keep an eye out for the brand making its Vegas debut at the Forum Shops soon.
