These days, there’s always more retail and restaurant news on Spring Mountain Rd in Chinatown. Home to retail centers like the Center at Spring Mountain and Chinatown Plaza, the stretch of Spring Mountain between Arville St and S Valley Blvd is packed with delicious food and drink options, whether it’s dumplings from Xiao Long Dumplings, boba from Las Vegas’s first boba brand No. 1 Boba Tea, or Korean BBQ at Tofu Hut. And the list goes way, way on.

One meal whose depths have yet to be fully fathomed there, however, is breakfast, and local breakfast chain BabyStacks Cafe is looking to fill in the gaps.

Word got out late last year that the chain, which currently has six locations operating in the area, would open a seventh location at 3508 S Wynn Rd. Permit paperwork recently submitted to Clark County shows that the project is moving forward.

BabyStacks Café offers a seriously thorough breakfast menu. Those looking for fun takes on breakfast classics will enjoy a wide variety of pancakes, crepes, omelets, and French toast. Dishes draw from an eclectic array of cuisines, offering Huevos Rancheros, Portuguese Fried Rice, or Spam Sliders. For that matter, why not Kalbi Beef Ribs & Eggs? Lunch is also available, including dishes like the Reuben, the Cry Baby Jalapeño Burger, and Blackened Chicken Salad.

What Now Las Vegas was unable to reach owner Liberty Hung on Tuesday. No hard opening date has yet been announced, so stay tuned for this innovative breakfast brand’s next move in Chinatown.

Who gives a crap. Another location that closes at 2 and stops seating at 1pm.

This owner has no idea how to run a business or make money. Open more locations to kick your customers out the door. Great idea!!
