The brand has been steadily building popularity since it was founded in 2008 in Los Angeles.

“Since then, our businesses have evolved with our neighborhood — with our menus guided by conversations and long-standing relationships with Southern California farmers, local ranchers, fishermen, and co-ops,” says the Gjelina website.

The dinner menu at the Los Angeles location includes a variety of pizzas whose flavor profiles are not given names, allowing the ingredients to speak for themselves. There’s Bottarga, Smoked Mozzarella, Confit Tomato, Arugula, Jalapeno; or Housemade Chorizo, Tomato, Cream, Fontina, Fennel, Chili, Basil; or Pomodoro Crudo – Cherry Tomato, Confit Garlic, Burrata, Basil‑to name a few.

The same goes for plates like Heirloom Squash Curry with tomatillo, oyster mushroom, red quinoa, chili, and mint; or Wood Roasted Prawn, with black garlic fermented chili butter and grilled lemon.

No opening date is available yet, but Gjelina is expected to launch at the Venetian before year’s end.
