Half Bird Chicken & Beer, the answer to the chicken craze from the restaurateur duo behind Sparrow + Wolf, will open its second location this July. Restaurateurs John Anthony and Chef Brian Howard are taking their rotisserie concept to the heart of Henderson, opening Half Bird number two at 725 S Green Valley Parkway.

Half Bird gas been growing in popularity with its healthier rotisserie-based reply to the massive explosion of fried chicken and the fried chicken sandwich seen these last few years. The chain is looking to open five or six locations in the next two years, Chef Brian Howard told What Now on Friday.
“Being in that oversaturated chicken market, we’re a level-up in terms of quality,” Howard said. “If you just put it on a plate, it’s what you’d find at a higher end restaurant.”
The first location opened last year in Chinatown, with a menu that features simple rotisserie choices: Butcher Wings or a Half Bird (each with 1 sauce) or The Whole Frickin’ Bird (with 2 sauces). These sauces include Chili Garlic Crunch, Green Curry Ranch, Sweet Miso BBQ, and more. The menu has also featured a selection of fried chicken sandwiches: the Spring Mountain “Hot Chicken,” the Classic Fried Chicken, and the plant-based No Bird.
The Henderson location will boast an expanded menu, with a roasted chicken sandwich and other lighter, healthier options. Most notably, the Henderson location will offer a significantly expanded beer program, including a self-pour tap wall. The space is expected to seat 45 inside, and another 20 on the patio.
“Half Bird is not just a destination. It’s something on the way home,” Howard said. “It’s a good place to stop and have a beer, and with the Henderson location, we’ll be expanding our offsite package, allowing people to refill growlers and so on. There will also be fun activations around that beer wall, like beer pong competitions, for example.”
