Founded in 2020, On Demand Sushi began as a sushi takeout spot in Summerlin before expanding to a second location on Southern Highlands Parkway, where the brand began to experiment with a more dine-in-based service. That experiment has been a considerable success, and it has led the brand to expand its service by adding a full bar in its Southern Highlands location.

“We have a full bar menu and everything,” owner Carey Parriott told What Now on Thursday. “There are nine seats at the bar, plus a private 10-top and three 2-tops. We’re offering specialty menus and daily drink specials, like 9-dollar unlimited mimosas on Sundays.”
On top of all this, On Demand Sushi is also at work on a third location, at 9250 S Rainbow Boulevard, where Parriott says construction is expected to start in the coming week. Like the Southern Highlands location, the new location launching in the retail center on the southeast corner of the Rainbow-Blue Diamond intersection will feature a full bar, along with the brand’s popular sushi boats and other unique offerings.
“We do a lot of things nobody does in Vegas,” Parriott said about On Demand Sushi’s growing popularity. “The boats are our big seller, of course, and we’ve just got some of the best sushi in Vegas. People love our to-go’s too, which are kind of unique.”
The bar at the Southern Highlands location is up and running now. On Demand Sushi’s third location is expected to open this fall.
