Chuy’s Appears to Be Headed to Las Vegas

The chain has almost 100 locations across the United States

Founded in 1982 in Austin, Texas, Chuy’s has since grown to include almost a hundred locations across the United States. Most of this growth has happened since 2009, when the first Chuy’s outside Texas opened in Franklin, Tennessee, a suburb of Nashville.

And now it appears the chain may be making its way to Las Vegas: permit paperwork submitted to Clark County shows plans for a “Chuys [sic]” project remodeling a 2,625 square-foot space at 5651 S Grand Canyon Drive.

The Chuy’s menu is one of considerable size. It includes familiar appetizers like Queso, Guacamole, and Nachos; soups and salads like the Mexi-Cobb Salad with fajita chicken; and “Big as Yo’ Face” Burritos with protein choices like Fajita Chicken, Fajita Beef, and Bean & Cheese.

House Specialties include combos like the Comida Deluxe (Cheese enchiladas with Tex-Mex Sauce, chicken flautas, a crispy taco, guacamole & homemade tostada chips dipped in queso) and The Elvis Presley Memorial Combo (A seasoned ground bee enchilada with Tex-Mex Sauce, chicken enchilada with Tomatillo Sauce, cheese enchilada with Ranchero Sauce, crispy taco & homemade tostada chips dipped in queso).

What Now reached out to Chuy’s CEO Steve Hislop on Thursday. Hislop was not available for comment. No opening date has been announced for a Chuy’s location in Las Vegas.

Write up is wrong! The California Chuys is coming to Vegas. Not the Texas version.
