Graze Kitchen to Open This November

After several delays, the restaurant has an opening date

The long-awaited opening of Graze Kitchen, a plant-based restaurant from the owners of Firefly Tapas Kitchen & Bar, will come before the end of this year. After planning on a May opening, and then a summer opening, the restaurant restaurant is now set to open this November.

Co-Owner Tabitha Simmons confirmed the news on the phone with What Now Las Vegas on Monday afternoon.

Simmons described Graze Kitchen as a product of COVID-19’s straitening effects on the restaurant industry. “When we first conceived of Graze, we had a closed down 11,000 square-foot restaurant.” Simmons and her husband and fellow restaurateur John Simmons decided to use that extra square footage to open a vegan restaurant.

John and Tabitha later discovered Amelia Cooper, a self-taught vegan chef, and Graze Kitchen was born.

Cooper’s menu will feature fresh American fare described by Simmons as “liberating veganism from the ‘vegan lifestyle.’” The menu will also include appetizers, chips and dips, seasonal soup and chili, Firecracker Cauliflower, and a variety of vegan sandwiches and salads. With the exception of its vegan cheese, sourced from companies that culture their vegan cheeses, everything—including seitan and other non-meats—will be made in house.

“We’re not vegan activists,” Simmons said. “We just want to offer vegan food to the community so they can choose it, even just once a week. Minimally processed whole foods, with no refined sugar whenever possible.”

Other creative menu items include the cauliflower-chorizo torta, and Korean BBQ nachos.

Graze Kitchen is located at 7355 S Buffalo Dr, beside the original Firefly Tapas Kitchen & Bar. Also nearby are Graffiti Bao, Fukuburger Buffalo, and Suzuya Patisserie.
