What Now Las Vegas reached out to owner/operator Chipper Pastron on Monday and Tuesday. Pastron said the renovations were prompted by increased demand at these locations for the restaurant’s organic food options.

“The new space will double our current capacity and allow for expanded menu offerings as convention business returns to town,” Pastron said.

JuiceFarm’s organic food offerings are not currently listed on its website. The more familiar parts of its menu include cold-pressed juices and smoothies made with fruit, vegetables, nuts, and other nutritious ingredients, along with a small selection of coffee drinks.

The restaurant uses a presser that boasts a total of 15,000 pounds of pressure, allowing for a cold-pressing juice method that retains nutritional value otherwise lost when the juice is heated. It also serves “Wellness Shots,” small servings of intensely flavorful and nutritious ingredients.
