“Vegas is growing, and I want to grow with it,” Binion told What Now in a phone conversation on Friday.

Binion began in hospitality as the proprietor of a St. Louis lounge called Binion’s, where he began to roll out chicken that quickly became extremely popular—so popular that it had to be spun off into its own concept: Just Chicken.

“Just Chicken is the right place for the chicken lover in you,” says the brand’s website. “Our products are fresh, hand battered and cooked to perfection daily. Whether dining in or carrying out Just Chicken satisfies your needs.”

The Just Chicken menu features a wide selection of chicken choices, including wings, tenders, gizzards, fajitas, chicken sandwiches, chicken nachos, and hand cut fries and sweet potato fries.

Just Chicken’s first Las Vegas home will be at 3858 W Sahara Avenue, in Valley Oaks Plaza, a retail center located on the northwest corner of the intersection with South Valley View Boulevard. Valley Oaks Plaza is also home to Peru Chicken, Carl’s Jr., and Tacos Mexico. It’s expected to open in Q1 2024.
