Opening at Fontainebleau Las Vegas: Cantina Contramar

After what seems like forever, Fontainebleau Las Vegas is finally open, and with it, a stunning collection of restaurants, including Don’s Prime, La Fontaine, Komodo, Papi Steak, and many more. Another new restaurant is expected to open there this spring: Cantina Contramar, a restaurant from “Chef Gabriela Cámara, award-winning architect Frida Escobedo, and Bertha González Nieves, Tequila Casa Dragones founder and the first maestra tequilera.”

“Contramar is the embodiment of Gabriela Cámara’s 25 years of experience in delivering high-quality food, beverages, and atmosphere to local and international guests alike,” says the Fontainebleau Las Vegas website. “Expect the chef’s signature seafood dishes, perfected in Mexico City, alongside new items which showcase the wide range and quality of Mexican cuisines.”

Contramar dishes teased in coverage by Eater Las Vegas include “tangy tuna tostadas and grilled whole fish with red and green sauce.” There will also be a Casa Dragones tasting room.

“Our journey of taste begins with a small batch, modern sustainable method of tequila production, meticulously handcrafting each bottle to deliver an extraordinary sipping experience,” says the tequila brand’s website. “This approach enables us to maintain focus and strict quality control in each batch, ensuring an exceptional taste and the highest possible quality.”

Cantina Contramar is shaping up as a major destination for Mexican cuisine (and tequila!) in Las Vegas.
