Twice Baked is getting ready to unlock its doors as the already announced first storefront for the gourmet baked potato restaurant will be opening in early 2021.

“I feel like I made the right decision in life. I’m proud to have gotten to this point and I feel that Twice Baked is destined for greatness,” Owner Rochelle Hodge-Conyers said. “Back in September I was looking at locations and must have visited over 20 places.”

It wasn’t until she visited 6020 W. Craig Rd., Suite 130, next to Lowe’s, until she felt at home.

“The moment I got there, I felt like this was location I was looking for,” Hodge-Conyers said. “The parking lot was packed and I felt in my stomach that this was the one.”

She hopes to open by the end of May or beginning of June.

Moving into a roughly 1,200-square-foot space, Twice Baked will be a spot for gourmet baked potatoes, crispy rolls, and great drinks like Perfectly Peachy and Citrus Watermelon.

Hodge-Conyers felt that this was just the beginning for Twice Baked.

“We want to get off the ground with the spot with an amazing team and amazing location but we’re already starting to look for spot number two,” she said. “We provide great customer service, great food, and get the food out on time and don’t just take care of meat lovers, but vegetarians and vegans as well.”
