Known for its paella, charcuterie, and tapas, Spanish restaurant Valencian Gold will close until after the new year. Its owner and chef Jeffrey Weiss is taking a trip to Spain to find new inspiration and to move forward with a few upcoming Las Vegas projects, according to recent coverage in Eater Las Vegas.

The restaurant has already undergone some major changes since it opened in 2019. Though it began as a fast casual restaurant, Weiss reimagined it as a full-service sit down concept. It reopened in its current form in 2021.

Chef Weiss has cooked in Spain and developed an eclectic taste that shows up in Valencian’s menu, whose ¡Muy Especial! section features choices like Foie Gras Rice Krispie Treats with goat cheese and sea salt right alongside La Mancha Roast Chicken with saffron-almond sauce. Paella varieties include Super Mario (wild mushrooms, chickpeas, green beans) and All of the Sins (baby shrimp, chorizo, corn, charred corn crema).

What Now reached out to Chef Weiss on Tuesday. Weiss was not available for comment. It is not yet known when Valencian Gold will reopen in the new year, so stay tuned for updates from What Now Las Vegas.
