Butcher and Thief Looks to Offer Affordable Steak Option In The Bend

Already with Carson Kitchen in Las Vegas, other cities, Owner Cory Harwell hopes to expand the Vegas steak market with his new restaurant, Butcher & Thief.

The new spot, located off The Bend, will be part of the campus at the MagnuM Tower, a multi-story office building in development in southwest Vegas.

While Harwell did not have an opening date set yet, though he expects to be open by the first quarter next year, he hopes to provide a new affordable option for steak lovers in the area.

“We really want to attack mid-market steak opportunities,” he explained in a phone call to What Now Las Vegas. “I think there are wonderful brands that fill that lower-tier $25 steak and for a $75 ribeye there are plenty of places.”

He will look for Butcher & Thief to sit between the two.

“We’re hoping that a husband and wife can come in, grab a couple of steaks, wine and a side dish and get out the door at $120 instead of $250,” he said.

With a butcher shop in-house, customers will walk through the retail element on their way to the restaurant.

“We want to be a steak option that you want to go to once a month,” he added.

Just off Highway 215, the location is a huge draw for Harwell.

“We’re very bullish on the southwest part of the valley,” he said.

He felt that the community in the area is underserved, particularly from a restaurant perspective, and especially in terms of steakhouses.

“The underserved nature is attractive and we think it’s a huge opportunity for the location of a steak restaurant,” he added.
