Miami-Based Restaurant Stubborn Seed to Open at Resorts World

It’s the second location for the restaurant from Top Chef Season 13 Champion Jeremy Ford and Grove Bay Hospitality Group

Founded by Top Chef Season 13 winner Jeremy Ford and the award-winning Grove Bay Hospitality Group, Miami-based restaurant Stubborn Seed is headed to Las Vegas. The restaurant will launch its second location in Summer 2024 at Resorts World Las Vegas.

“Marking its second location, Stubborn Seed at Resorts World Las Vegas will take guests on an extraordinary culinary journey as Chef Ford brings his impeccable talents to the luxury resort,” says a press release. “The coveted Miami Beach-based restaurant will boast a chef-forward tasting menu, featuring seasonal and locally inspired ingredients brought to life by Chef Ford’s brashly creative cooking. A stellar beverage program with innovative cocktails will round out the dining experience.”

Opening at Resorts World, Stubborn Seed will join a restaurant community that includes Aqua Seafood & Caviar Restaurant, Bar Zazu, Brezza, Carversteak, and other prestigious concepts.

“We are dedicated to bringing the best culinary experiences to our guests at Resorts World Las Vegas and are thrilled for the opportunity to welcome Chef Ford and his highly acclaimed restaurant to the property,” Peter LaVoie, President of Resorts World Las Vegas, said in the press release. “Stubborn Seed holds a reputation for impeccable dining and we cannot wait to introduce its Michelin-starred cuisine to the Las Vegas market.”

What Now reached out Tuesday to Grove Bay Hospitality Group CEO Ignacio Garcia-Menocal to inquire about plans for the Las Vegas location. Garcia-Menocal was not immediately available for comment.
