Michelin-Starred Chef Rick Bayless Bringing Tortazo to Vegas

The chef’s torta-focused Mexican restaurant will open at Caesars Palace

Michelin-starred chef Rick Bayless is bringing his torta-focused Mexican restaurant Tortazo to Las Vegas! The restaurant, which has several locations in New York and Chicago, will open its first outpost in Nevada (and the entire West Coast area) at Caesars Palace later this year, according to recent coverage by Eater Las Vegas.

“Inspired by Mexico’s vibrant food, colors, and culture, Tortazo is a place of discovery – of bold flavors and new culinary experiences – but also where the genuine warmth of Mexican hospitality will embrace you,” says the Tortazo website’s About page.

The Eater Las Vegas coverage says the restaurant is expected to open at Caesars late this summer, after the brand launches a location at the Harrah’s Joliet in the Chicago market.

“Tortazo’s menu includes dishes like tacos, guacamole, and tortilla soup,” says the Eater coverage. “But the highlight is the torta, each served on a soft telera roll brushed with black beans. There’s a vegan option with portabello mushrooms, chihuahua cheese, roasted poblanos, and salsa; and tortas like one with crispy chicken, pickled jalapeños, cotija cheese, and cilantro crema.”

What Now reached out to Tortazo president Sam Lipp on Thursday to inquire about plans for the Las Vegas rollout. Lipp was not immediately available for comment.
