Opening at Fontainebleau Las Vegas: Papi Steak

As Fontainebleau Las Vegas prepares to open on December 13, the resort has finally revealed many of the details about its upcoming bar and restaurant collection. In total, the resort is expected to feature 36 different concepts.

In the coming weeks, What Now will take a closer look at some of the concepts opening in the resort, as well as in its Promenade food hall.

Another restaurant concept headed to Fontainebleau Las Vegas when it opens this December is Papi Steak. With one location already operating in Miami, Papi Steak is a unique steakhouse from David “Papi” Einhorn and South Florida restaurateur David Grutman.

Papi Steak, says recent coverage by the Las Vegas Review-Journal, “mingles Golden Era Hollywood with a contemporary sensibility to create its steakhouse experience. If the Miami menu is any guide, think hot and cold seafood starters, fish and shellfish, caviar and several high-end cuts of beef.”

Papi Steak’s Miami menu includes starters served cold, like Hamachi Crudo with citrus ponzu, crispy shallot, and sesame, and served hot, like Latkes with crème fraiche, house made apple sauce, and chive. Seafood Dishes include Grilled Bronzino with roasted tomato, radish, and salsa verde and Broiled Alaskan King Crab. And, of course, there is a range of steaks and other meats on offer, from the 8-oz. Filet Mignon to the 48-oz. Prime Porterhouse, to the ½ Rack of Lamb.
