The shopping center near Chinatown Vegas is where Founder Dipo Alam wants to be.

“We just finished signing the lease and will be building up the architecture and everything,” he said. “We really wanted to be in there. We’ll get traffic off the streets and it’s about time we bring it to different markets we know we can tap into.”

Started in June, 2017, Alam was ready for expansion by 2018 and now has over 20 restaurants signed up so far. Mainly in New Mexico and California, he hopes the Las Vegas location will be the start of something big for the franchise.

To be led by Franchisee Jay Bark, The Paleta Bar in the Shanghai Plaza will have similar offering to other locations.

“We really wanted to be in there,” he explained. “We’ll get traffic off the streets and it’s about time we bring it to different markets we know we can tap into.”

Bark expected the buildout to take six to seven months as they “have to build the bar rom scratch.”

He said the new spot will be a great fit for the area.

Alam hopes to have over 10 Paleta Bars in the Las Vegas-area over the next few years.

“This will be our first one in Nevada and we want to see people’s reaction to it,” he added.

Paleta is Spanish for ice pops and as the name might suggest the Paleta Bar serves authentic, fresh and gourmet Mexican ice pops with dippings and toppings that offer endless combinations.

Each is homemade daily using the finest ingredients using fresh fruits, sweet cream and milk.
