Southern California’s Everbowl Expanding into Las Vegas Valley

Founded in San Diego, Everbowl offers customizable superfood bowls with acai, pitaya, matcha and more

Jeff Fenster founded Everbowl in 2016 with the intention of serving “stuff that’s been around forever,” as the company slogan describes. This March, Henderson will see its first Everbowl at 615 S Green Valley Pkwy.

What Now Las Vegas spoke with the CEO on Wednesday about the brand’s upcoming expansion into The Valley, and what to expect.

“We’re all about promoting the eating aspect of being your best self,” Fenster said. “So we’re trying to make healthy eating affordable, filling, delicious and accessible.”

By the end of January, Everbowl will have opened 33 locations throughout the Western U.S.

By the time they reach Henderson in March, their count will be at least 36. 

When customers enter an Everbowl, they can choose their preferred base layer of acai, pitaya and matcha, among other superfoods. For toppings, Everbowl offers unlimited combinations of fruit and seeds. The coffee menu includes a Guatemalan blend with acai berry, matcha and vanilla, as well as a Colombian roast with acai and MCT oil. 

“Our ‘why’ is ‘unevolve,’” Fenster explained. “That’s our North Star. It means to live and eat the way you were meant to: living actively and eating stuff that’s been around forever.”

In addition to this Henderson location, Everbowl plans to open several other throughout the Las Vegas Valley. As the company expands, Fenster has made a point to localize Everbowl’s management. By extending franchise opportunities to Las Vegas residents, he hopes to keep the growth within the community.

“We work with locals,” Fenster said. “That’s one of our rules at Everbowl; we hire within the community that we open in. When we open in Vegas, we want the growth to be happening in Vegas.”
