Another restaurant on the food and drink roster of the upcoming Durango Casino and Resort has been revealed. Summer House Santa Monica, a concept from national hospitality group Lettuce Entertain You, will open at the resort with California-inspired cuisine and décor, according to recent coverage by the Las Vegas Review-Journal.
Lettuce Entertain You currently has five restaurants on the Las Vegas Strip, including Mon Ami Gabi and RPM Italian, but Summer House will be its first off-the-Strip restaurant.
“We have been part of Las Vegas for 24 years,” says Lettuce Entertain You president R.J. Melman in the RJ coverage. “We just felt it was time to do something local-facing.”
The Durango Resort location’s menu is still under development, but other Summer House locations might give us some hints. The Lincoln Park, Chicago location offers sandwiches like the Crispy Chicken and the Peppercorn Burger; pastas like Bucatini Pomodoro and Spicy Rigatoni Alla Vodka; and pizza varieties like Prosciutto & Egg and Spicy Salumi & Burrata.
Other California-inspired dishes have included Grilled Tequila-Lime Chicken Tacos and the Hearth-Fired Center Cut Beef Tenderloin.
