Blue Diamond Old School Pizzeria Location Still Awaits an Opening

Signs point to an opening in the near future for the pizza chain's 3rd location

Word got out last year that Chef Gio Mauro’s Old School Pizzeria would expand to a third location at 8045 Blue Diamond Rd, one that would include a prep kitchen to supply all three locations with fresh ingredients and the brand’s signature dough. The third location was expected to open last September, but even as the New Year has passed, no opening has eventuated.

Paperwork for a business license to operate at that address has been filed recently, however, which would seem to indicate that an opening is coming, at last, in the near future.

In addition to the restaurant’s creative pies, like the Apricot (apricot jam, apple-wood smoked bacon, Laura Chanel goat cheese, pine nuts, arugula) and the Vegas Meets Italy (Scamorza, ricotta, pistachio, dates, heirloom tomato, arugula, prosciutto, date cream), Old School also offers starters and salads, including Antipasto, Garlic Rosemary Bread Knots, and Lentil Soup with Bread. Specialty dishes include Crazy Good Roasted Chicken Thighs with Yukon potatoes and bread stuffing, Five Cheese Baked Mac, and the Meatball Sandwich. Order a cannoli for dessert.

“What drives me as a chef is providing the very best ingredients,” Chef Gio told What Now Las Vegas last May, before the chain’s second location opened on Rock Springs Dr. “We treat every ingredient with respect–roasting the bell peppers, caramelizing the onions–so that every ingredient shines.”

What Now Las Vegas was unable to reach the chef on Wednesday for a firm date, but expect to see more of Old School’s one-of-a-kind pizza on Blue Diamond Rd soon.
