Broken Yolk Cafe to Open St. Rose-Maryland Location

It will be the second Las Vegas location for the growing brunch chain

The Broken Yolk Café, a burgeoning brunch chain with locations in six states, opened its first las Vegas outpost in 2019 and has been serving inventive and delicious breakfast creations ever since. Now the chain is looking to expand with a second location, on the eastern corner of the St. Rose Pkwy-S Maryland Pkwy intersection. The location is brought to the city by Scale x 3 Management, a hospitality and commercial retail real estate group founded by experienced restaurateurs Randy Corrigan, Barry Tu, and McKenzie Cox.

“Since opening Broken Yolk Cafe in Las Vegas in 2019, we’ve been welcomed with open arms and truly appreciate the support,” Barry Tu told What Now Las Vegas in an email conversation this week. “We’ve seen the continued evolution and growth of Vegas’s food scene—as well as how resilient the industry has been during the pandemic—and it’s been exciting to witness. I’ve actually made the personal move from San Diego and now call Las Vegas my home and love being a part of this vibrant community.” 

Broken Yolk’s breakfast offerings include the Tiki Toast (Three extra thick slices of sweet KINGS HAWAIIAN(TM) bread, grilled to a golden brown and topped with strawberries, blueberries, shredded coconut, caramel drizzle, and powdered sugar); the Golden State Benedict with tomato, avocado, applewood smoked bacon, and a sriracha drizzle; and the Fiesta Burrito. Beverages at the new location will include smoothies, lattes, mimosa and bloody Mary flights, beer, and specialty cocktails.

The chain’s website also lists several other locations looking to open in 2022. Opening dates for these other locations are unknown, but the St. Rose-Maryland location is expected to open this summer.
