The move comes as the local family-owned chain looks to increase its presence in Las Vegas, and to expand elsewhere. The restaurant is considering southern Utah for its first venture outside of the the Las Vegas Valley, Rodney Ballard, an associate at the company, told What Now Las Vegas in a phone call on Wednesday.

Still, Ballard stressed the importance of Las Vegas to the chain’s sense of itself. “Vegas is our home,” he said. “We’re third and fourth generation Las Vegans. And our food and our brand have been very well received here. We couldn’t be more appreciative of the customers who support us.”

Frijoles & Frescas serves tacos, burritos, tostadas, and other familiar Mexican dishes with an array of proteins including carne asada, al pastor, and carnitas, with a meticulous attention to the freshness of its ingredients. “We have amazing products,” Ballard said, “thanks to our business partner and chef Francisco Salas.”

The new location at 7684 S Las Vegas Boulevard brings the restaurant chain still closer to the Las Vegas Strip and allows it to serve the Southern Highlands/West Henderson area. The building currently houses Penthouse Restaurant and Lounge, Las Pupusas, and Black Bear Diner.
